Description

Juicy peach slices bathe in cinnamon-spiced sugar and lemon juice, bubbling with sweet juices as a soft, buttery batter turns golden above them. Warm spoonfuls meld tangy fruit with a crisp topping.

Ingredients

  • 6 cups sliced peaches
  • 3/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup milk

Instructions

  1. Preheat oven to 375°F and place butter in a 9×13-inch baking dish to melt while the oven heats.
  2. In a large bowl, toss sliced peaches with 3/4 cup sugar, lemon juice, cinnamon, and 1/4 teaspoon salt.
  3. Pour the peach mixture into the hot baking dish with melted butter, spreading evenly.
  4. In a separate bowl, whisk flour, 1 cup sugar, baking powder, and 1/4 teaspoon salt.
  5. Add egg and milk to the dry ingredients and stir until just combined to form a batter.
  6. Spoon the batter evenly over the peaches without stirring into the fruit.
  7. Bake for 35 to 40 minutes or until the topping is golden brown and cooked through.
  8. Remove from oven and let stand for 10 minutes before serving warm.

Notes

  • Use perfectly ripe peaches for the sweetest flavor and best texture
  • For a quick shortcut, use frozen peach slices (thawed) in place of fresh
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream
  • Store leftovers covered in the refrigerator for up to 2 days
