Description

Cubes of sweet watermelon mingle with bright lime juice, citrus-scented cilantro and a hint of jalapeño spice. Just toss, chill and enjoy a crisp, vibrant salad that livens up summer meals.

Ingredients

  • 4 cups watermelon cubes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion
  • 1 jalapeño pepper
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Remove seeds from the jalapeño pepper and finely mince it.
  2. Place watermelon cubes in a large mixing bowl.
  3. Add chopped cilantro, sliced red onion and minced jalapeño to the bowl.
  4. In a small bowl whisk together lime juice, olive oil, salt and black pepper until combined.
  5. Pour the dressing over the salad ingredients and toss gently to coat.
  6. Refrigerate for at least 10 minutes to allow flavors to meld before serving.

Notes

  • Taste and adjust the seasoning with more salt or lime juice as needed.
  • Remove jalapeño seeds for a milder version or leave them in for extra heat.
  • For extra crunch, add a handful of toasted pumpkin seeds just before serving.
  • Serve immediately after chilling to maintain watermelon’s crisp texture.
