Ingredients
- 2 medium avocados
- 1/4 cup unsweetened almond milk
- 1/4 cup maple syrup
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 1 pinch salt
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a blender.
- Add unsweetened almond milk, maple syrup, unsweetened cocoa powder, vanilla extract, and salt to the blender.
- Blend on high speed until the mixture is completely smooth and creamy, pausing to scrape down the sides as needed.
- Taste and adjust the sweetness or consistency by adding more maple syrup or almond milk, then blend briefly to combine.
- Spoon the pudding into serving dishes and chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a richer chocolate flavor, increase the cocoa powder to 3 tablespoons.
- You can substitute agave syrup or date syrup for the maple syrup.
- Serve garnished with fresh berries or a dollop of coconut whipped cream.
- Store leftovers in an airtight container in the refrigerator for up to two days.
