Description

These golden rolls reveal a plush, buttery interior infused with pumpkin puree and warm spices, while the fresh rosemary in the crust adds a fragrant, herbaceous note that lingers with every bite.

Ingredients

  • 1 cup warm milk
  • 2 tablespoons active dry yeast
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 3 tablespoons unsalted butter melted
  • 1 large egg
  • 4 cups all-purpose flour
  • 2 tablespoons fresh rosemary finely chopped
  • 1 large egg for egg wash
  • 1 tablespoon water

Instructions

  1. In a small bowl combine warm milk, active dry yeast, and a pinch of sugar. Let sit until foamy, about 5 to 10 minutes.
  2. In a separate bowl whisk together pumpkin puree, granulated sugar, melted butter, one large egg, salt, ground cinnamon, and ground nutmeg until smooth.
  3. Pour the yeast mixture into the pumpkin mixture and stir to combine.
  4. Gradually add all-purpose flour and chopped rosemary, mixing until a soft dough forms.
  5. Turn the dough out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place until doubled in size, about 1 hour.
  7. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a round roll and place on a parchment-lined baking sheet.
  8. In a small bowl whisk together the egg for egg wash and water. Brush the egg wash over the tops of the rolls.
  9. Cover the rolls loosely and let them rise for another 30 minutes until puffy.
  10. Meanwhile preheat the oven to 375°F (190°C). Bake the rolls for 15 to 18 minutes or until golden brown on top.
  11. Transfer the rolls to a wire rack to cool slightly before serving.

Notes

  • Rolls can be brushed with melted butter immediately after baking for extra shine and flavor.
  • For a more intense flavor, refrigerate the dough overnight and bake the rolls the next day.
  • Sprinkle coarse sugar or additional chopped rosemary on top of the rolls before baking for added texture.
  • Leftover rolls can be frozen in an airtight container and reheated in a warm oven.
