Fluffy pumpkin cupcakes packed with cozy spices bake up tender and moist, then get topped with a creamy cinnamon-infused frosting that melts in your mouth, leaving a lingering warmth on every forkful.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • For the Frosting:
  • 4 ounces cream cheese softened
  • 2 tablespoons unsalted butter softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a large bowl cream butter with granulated and brown sugars until light and fluffy.
  4. Beat in eggs one at a time, followed by pumpkin puree and vanilla extract until smooth.
  5. Gradually add dry ingredients to wet ingredients, alternating with milk, mixing just until combined.
  6. Divide batter evenly among muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, beat cream cheese and butter together until smooth.
  10. Add powdered sugar, cinnamon, and vanilla and continue beating until light and creamy.
  11. Frost cooled cupcakes using a piping bag or offset spatula.

Notes

  • For extra depth use pumpkin pie spice in place of individual spices.
  • Ensure cream cheese and butter are at room temperature for a smooth frosting.
  • Store frosted cupcakes in an airtight container in the refrigerator for up to 3 days.
  • Bring cupcakes to room temperature before serving for the best flavor.
