Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 3/4 cup warm milk
- 2 tablespoons melted butter
- 1 large egg
- 1/2 cup creamy peanut butter
- 1 medium banana mashed
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl combine flour, sugar, yeast, and salt.
- In a separate bowl whisk warm milk, melted butter, and egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for 5 to 7 minutes until it becomes smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and roll it into a 12×8 inch rectangle on a floured surface.
- Spread the creamy peanut butter evenly over the dough, leaving a small border around the edges.
- Sprinkle the mashed banana, brown sugar, and cinnamon evenly over the peanut butter layer.
- Starting from the long side, roll the dough tightly into a log and pinch the seam to seal.
- Cut the log into 10 even slices and place them cut-side up in a greased baking pan.
- Cover the pan and let the rolls rise for 30 minutes until puffy.
- Preheat the oven to 350°F (175°C) while the rolls rise.
- Bake the rolls for 20 to 25 minutes or until they are golden brown on top.
- While the rolls are baking, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Remove the rolls from the oven and drizzle the icing over them while they are still warm.
Notes
- Make sure the milk is about 110°F so it activates the yeast without killing it.
- You can swap creamy peanut butter for crunchy for extra texture.
- Allowing the rolls to cool slightly before icing helps the glaze set.
- Serve warm for the best gooey texture and flavor.
