Description

Bright peach slices and peppery arugula are tossed with a silky honey-lemon vinaigrette, crowned with creamy goat cheese—each bite bursts with sweet, tart, and savory notes.

Ingredients

  • 4 cups arugula
  • 2 medium peaches
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 ounces crumbled goat cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse arugula under cold water and pat dry, then transfer to a large salad bowl.
  2. Stone the peaches and slice them into thin wedges, then add to the bowl with the arugula.
  3. In a small bowl whisk together olive oil, honey, lemon juice, salt, and black pepper until emulsified.
  4. Drizzle the dressing over the arugula and peaches, then sprinkle the crumbled goat cheese on top.
  5. Gently toss the salad to combine all ingredients and serve immediately.

Notes

  • For a richer flavor, substitute balsamic vinegar for lemon juice.
  • Add toasted almonds or pistachios for extra crunch and texture.
  • Use firm, ripe peaches to prevent the salad from becoming too watery.
  • Assemble the salad just before serving to keep the arugula leaves crisp.
