Description

Warm ribbons of yellow squash mingle with translucent onions sizzling in butter and olive oil, filling the kitchen with a sweet, savory aroma. Each bite is tender, lightly browned, and flecked with fresh parsley.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 medium yellow squash
  • 1 medium onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chopped fresh parsley

Instructions

  1. Slice the squash into 1/4-inch rounds and thinly slice the onion.
  2. Heat the butter and olive oil in a large skillet over medium heat.
  3. Add the onions and cook until soft and translucent, about 5 minutes.
  4. Stir in the squash, salt, and pepper, then cook until the squash is tender and lightly browned, about 8–10 minutes.
  5. Sprinkle the chopped parsley over the squash and onions, stir gently, then remove the skillet from heat.
  6. Transfer the squash and onions to a serving dish and serve warm.

Notes

  • Adjust seasoning by adding more salt or pepper to taste
  • Use red onions for a sweeter and slightly sharper flavor
  • A pinch of red pepper flakes can add a subtle kick
  • Works well served alongside roasted chicken or grilled meats
