Description

Thin zucchini slices get a smear of herb-spiked ricotta, a shower of Parmesan, and gooey mozzarella. A quick bake brings out a golden edge, offering a fresh, cheesy crunch with every bite.

Ingredients

  • 12 slices zucchini
  • 1 cup ricotta cheese
  • 2 tbsp grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the zucchini slices in a single layer on the prepared sheet.
  3. Brush the zucchini lightly with olive oil and season with salt and pepper.
  4. In a bowl combine ricotta, Parmesan, garlic, basil, parsley, salt, and pepper.
  5. Spoon a small layer of the ricotta mixture onto each zucchini slice.
  6. Top each with a sprinkle of shredded mozzarella cheese.
  7. Bake for 8 to 10 minutes until the cheese is melted and lightly golden.
  8. Remove from oven and let cool slightly before serving.

Notes

  • Use medium zucchini for uniform slices and even cooking.
  • Add a pinch of red pepper flakes to the ricotta mix for a spicy kick.
  • Serve these melts warm for the best texture and flavor.
  • Store any leftovers in an airtight container in the refrigerator for up to 2 days.
