Description

Sweet-tart apple slices and crisp greens are tossed with crunchy walnuts and salty feta, then coated in a glossy honey-lemon dressing that glistens on each vibrant leaf.

Ingredients

  • 2 medium Honeycrisp apples
  • 4 cups mixed salad greens
  • 1/2 cup walnuts
  • 1/3 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and dry Honeycrisp apples then core and thinly slice them, tossing immediately with lemon juice to prevent browning.
  2. In a small bowl whisk together olive oil, honey, salt, and pepper until well emulsified.
  3. Place mixed salad greens in a large bowl and top with sliced apples, walnuts, crumbled feta, and red onion.
  4. Drizzle the dressing over the salad and toss gently until all ingredients are evenly coated.
  5. Divide the salad among serving plates and serve immediately.

Notes

  • For extra crunch substitute walnuts with pecans or almonds.
  • Dressing can be prepared ahead and stored refrigerated for up to two days.
  • To prevent apple slices from browning, soak them in cold water with lemon juice briefly.
  • Feel free to add dried cranberries or sliced pears for additional flavor.
