Description

Fresh zucchini meets sharp garlic and nutty Parmesan in these crunchy bites, baked until golden. Each morsel offers a tender interior and crisp edges, perfect dipped in marinara or tangy yogurt for a flavorful snack or party pleaser.

Ingredients

  • 2 medium zucchini shredded
  • 2 cloves garlic minced
  • 1 large egg beaten
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup whole wheat breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl combine the drained zucchini, minced garlic, beaten egg, Parmesan cheese, breadcrumbs, salt, and black pepper. Mix until well incorporated.
  4. Scoop about 1 tablespoon of the mixture and shape it into small, flat rounds. Place them on the prepared baking sheet, spacing them about 1 inch apart.
  5. Brush or spray the tops of the bites with a little olive oil to help them crisp.
  6. Bake for 15 to 20 minutes, or until the bites are golden brown around the edges. Flip them halfway through baking for even crispiness.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Make sure to thoroughly drain the zucchini to prevent soggy bites.
  • You can prepare the mixture ahead of time and refrigerate for up to 24 hours before baking.
  • Serve warm with marinara sauce or Greek yogurt dip for extra flavor.
  • Feel free to add chopped fresh herbs like parsley or basil to the mixture.
