Description

Juicy seasoned beef mingles with crisp lettuce, diced onions, and tangy pickles. A creamy special sauce and melted cheddar add rich flavor to each bite. Ready in minutes and ideal for light lunches or make-ahead meals.

Ingredients

  • 1 lb lean ground beef
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded iceberg lettuce
  • 1/2 cup diced white onion
  • 1/2 cup chopped dill pickles
  • 1/2 cup shredded reduced fat cheddar cheese
  • 1 medium tomato chopped
  • 2 tbsp light mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp yellow mustard
  • 1 tsp white wine vinegar

Instructions

  1. Heat a skillet over medium heat and add the ground beef seasoned with salt and pepper, breaking it apart as it cooks until browned and fully cooked.
  2. In a small bowl whisk together the mayonnaise, ketchup, sweet pickle relish, mustard, and white wine vinegar until smooth to make the special sauce.
  3. Divide the shredded lettuce evenly among serving bowls, then top with diced onion, chopped pickles, chopped tomato, shredded cheese, and cooked beef.
  4. Drizzle the special sauce over each bowl and gently toss to combine all the flavors.
  5. Serve immediately or chill for 10 minutes for a cooler dish.

Notes

  • Use lean ground turkey as an alternative for lower fat content
  • Add sesame seeds on top for a nutty sesame flavor reminiscent of a Big Mac bun
  • Prepare in advance and store sauce separately for easy meal prep
  • Adjust the amount of relish and mustard to taste for a spicier or sweeter sauce
