Description

Shaved beet ribbons shimmer with color and crunch, tossed in a bright lemon-honey dressing with garlic and parsley for a refreshing, earthy bite that livens up any meal.

Ingredients

  • 2 medium beets
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons parsley

Instructions

  1. Wash and peel the beets, then grate them using a box grater or food processor.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the grated beets and toss gently to coat all pieces evenly.
  4. Let the salad rest for 10 minutes, then sprinkle with chopped parsley and serve.

Notes

  • You can use a food processor with a grating attachment to speed up the process.
  • For added sweetness and color, mix in grated carrot or apple.
  • Allowing the salad to chill for at least 30 minutes enhances the flavors.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
