Description

Crunchy whole grain crackers topped with turkey and cheddar cheese mingle with crisp carrots, cucumber rounds, and bright cherry tomatoes. Creamy dill yogurt dip and hummus add tangy richness, while fresh apple slices bring a sweet finish.

Ingredients

  • 12 pieces whole grain crackers
  • 4 slices low-sodium turkey breast
  • 2 slices reduced-fat cheddar cheese
  • 1 cup carrot sticks
  • 1 cup cucumber rounds
  • 1/2 cup hummus
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • 1 cup cherry tomatoes
  • 1 medium apple
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Arrange whole grain crackers evenly on a serving platter or bento box.
  2. Roll each slice of turkey breast and cheddar cheese separately and place beside the crackers.
  3. In a small bowl, whisk together Greek yogurt, lemon juice, dried dill, and garlic powder to create a creamy dip.
  4. Spoon hummus into another small dish and set both dips in the center of the platter.
  5. Neatly place carrot sticks, cucumber rounds, and cherry tomatoes around the dips.
  6. Core and slice the apple, then fan the slices on the platter to add a fresh fruit component.
  7. Sprinkle chopped fresh parsley over the dips for a pop of color and flavor.
  8. Serve immediately or pack components in separate compartments for an on-the-go meal.

Notes

  • Use gluten-free crackers to make it gluten-free
  • Substitute turkey with grilled chicken strips for variety
  • Prepare dips the night before to save time in the morning
  • Keep components chilled until serving to preserve freshness
