Description

Golden zucchini sticks hide a tender, juicy inside under a super-crispy Parmesan-panko crust. Ready in minutes, these fries offer an irresistible crunch and pair beautifully with spicy marinara or creamy garlic aioli.

Ingredients

  • 2 medium zucchini
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 cups vegetable oil

Instructions

  1. Preheat vegetable oil in a deep skillet or pan to 350°F (175°C).
  2. Wash and dry zucchini then cut into 1/4-inch thick sticks to resemble fries.
  3. Place flour in a shallow bowl, whisk eggs in a second bowl, and combine panko breadcrumbs, Parmesan cheese, salt, black pepper, garlic powder and paprika in a third bowl.
  4. Dredge each zucchini stick first in flour, then in egg mixture, and finally coat evenly with the breadcrumb mixture.
  5. Fry zucchini sticks in batches for 2 to 3 minutes or until golden brown and crispy.
  6. Use a slotted spoon to transfer fries to a paper towel–lined plate to drain excess oil.
  7. Serve hot with your favorite dipping sauce.

Notes

  • Serve with marinara sauce, ranch dressing, or garlic aioli for dipping.
  • For a lighter version, bake fries at 425°F (220°C) for 20 minutes, flipping halfway.
  • Pat zucchini dry before breading to reduce oil splatter.
  • Panko breadcrumbs help achieve extra crunch.
