Description

Bite into golden, crunchy zucchini slices seasoned with garlic and paprika. A light olive oil brush ensures a perfect crisp and a warm, savory aroma in every bite.

Ingredients

  • 2 medium zucchini
  • 1 egg white
  • 1/4 cup panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp olive oil

Instructions

  1. Preheat oven to 220°C (450°F) and line a baking sheet with parchment paper.
  2. Wash zucchini and slice into 1/4-inch rounds.
  3. In a shallow bowl whisk egg white until frothy.
  4. In another bowl combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  5. Dip each zucchini slice into egg white, then press into breadcrumb mixture to coat evenly.
  6. Place coated slices on baking sheet and lightly brush with olive oil.
  7. Bake for 15 to 18 minutes, flipping halfway through, until golden and crisp.
  8. Remove from oven and let rest for 2 minutes before serving.

Notes

  • Press slices firmly into the coating for better adhesion
  • Serve immediately for optimal crispiness
  • Store leftovers in a single layer to maintain texture when reheating
  • Add Italian seasoning or red pepper flakes for extra flavor
