- 100 g crumbled feta cheese
- 50 g breadcrumbs
- 2 large eggs
- 1 tablespoon chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- salt to taste
- pepper to taste
- 2 tablespoons olive oil
Instructions
- Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl combine zucchini, feta cheese, breadcrumbs, eggs, parsley, garlic powder, onion powder, dried oregano, salt, and pepper.
- Mix until ingredients are evenly distributed and the mixture holds together.
- Shape the mixture into small balls, about 2.5 cm in diameter.
- Heat olive oil in a nonstick skillet over medium heat.
- Fry the zucchini balls in batches, turning occasionally, until golden brown and crispy on all sides, about 4–5 minutes per batch.
- Transfer cooked zucchini balls to a paper-towel-lined plate to drain excess oil and serve immediately.
Notes
- For extra crispiness, bake at 200°C for 15 minutes instead of frying
- You can substitute breadcrumbs with almond flour for a gluten-free option
- Make sure to squeeze out all excess moisture to prevent soggy balls
- Serve with tzatziki, marinara sauce, or your favorite dipping sauce
