Description

Bright kernels of sweet corn mingle with creamy mayo and sour cream, spiced with cumin and chili powder. A burst of tangy lime and salty cotija makes every chip scoop a carnival of flavors.

Ingredients

  • 2 cups corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cotija cheese crumbled
  • 1 tablespoon lime juice
  • 1 tablespoon chopped cilantro
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the corn by boiling it for 3 minutes or thawing if frozen, then drain and cool.
  2. In a bowl combine mayonnaise, sour cream, lime juice, chili powder, ground cumin, salt and black pepper until smooth.
  3. Fold in the cooled corn, cotija cheese and chopped cilantro until evenly coated.
  4. Cover and refrigerate the dip for at least 1 hour to allow flavors to meld.
  5. Serve chilled with tortilla chips or fresh vegetables.

Notes

  • Use fresh corn when in season for the best texture and sweetness
  • Substitute Greek yogurt for sour cream to lighten the dip
  • Add finely chopped jalapeno or hot sauce for extra spice
  • Store covered in the refrigerator for up to 3 days
