Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter melted
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin or line with paper cups.
- In a large bowl whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
- In another bowl beat the egg with milk, 2 tablespoons melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- Divide the batter evenly among the muffin cups and bake for 15–18 minutes or until a toothpick comes out clean.
- While the muffins bake, combine 1/2 cup granulated sugar and cinnamon in a shallow bowl.
- Remove muffins from the oven and let them cool in the pan for 2 minutes, then brush each with melted butter and roll in the cinnamon-sugar mixture until coated.
Notes
- Do not overmix the batter to keep muffins light and tender.
- For extra flavor substitute milk with buttermilk.
- Store cooled muffins in an airtight container at room temperature for up to 3 days.
- Reheat briefly before serving for that fresh-out-of-the-oven taste.
