Description

Mini sandwiches of sweet banana and nutty peanut butter get dipped in glossy melted chocolate, then frozen into perfectly chilled, crunchy-edged treats that melt on your tongue.

Ingredients

  • 2 medium bananas
  • 4 tablespoons peanut butter
  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • pinch salt

Instructions

  1. Peel the bananas and slice them into 1/4-inch thick rounds.
  2. Spread about 1/2 teaspoon of peanut butter on half of the banana slices.
  3. Top with the remaining banana slices to form little sandwiches.
  4. In a microwave-safe bowl or over a double boiler, melt the chocolate chips with the coconut oil until smooth.
  5. Dip each banana sandwich into the melted chocolate, letting excess drip off.
  6. Place the coated bites on a parchment-lined tray and sprinkle lightly with salt.
  7. Freeze for at least 1 hour until firm.

Notes

  • Store finished bites in an airtight container in the freezer.
  • For a softer texture, let sit at room temperature for a few minutes before eating.
  • Substitute almond or cashew butter if preferred.
  • Add chopped nuts or coconut flakes for extra crunch.
