Description

Golden-baked quinoa rounds blend sharp cheddar, Parmesan, and fragrant garlic into bites of tender broccoli and nutty grains. Each golden sphere offers a satisfying crunch giving way to a warm, cheesy center perfect for dipping.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup broccoli florets finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Rinse quinoa under cold water, then combine with water in a saucepan and bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until water is absorbed, then fluff with a fork.
  4. Steam broccoli for 3–4 minutes until tender, then chop finely and set aside.
  5. Heat olive oil in a skillet over medium heat, add garlic, and sauté for 1 minute until fragrant.
  6. In a large bowl, mix cooked quinoa, broccoli, garlic, cheddar, Parmesan, egg, breadcrumbs, salt, and pepper until well combined.
  7. Scoop tablespoonfuls of the mixture and shape into bite-sized rounds on the baking sheet.
  8. Bake for 15–20 minutes until the bites are golden and firm to the touch.
  9. Let cool for 5 minutes before serving.

Notes

  • You can substitute mozzarella or pepper jack for cheddar cheese.
  • Prepare the mixture a day ahead and refrigerate for quicker assembly.
  • To freeze, place baked bites on a tray until firm, then transfer to a freezer bag.
  • Serve warm with marinara sauce, ranch dressing, or a yogurt dip.
