Golden zucchini rounds shimmer with melted mozzarella and Parmesan, crisping at the edges under a hint of garlic and pepper. A fresh basil finish adds herbal brightness to every cheesy, savory bite.
Ingredients
- 3 medium zucchini
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 120 grams shredded mozzarella cheese
- 60 grams grated Parmesan cheese
- 1 tablespoon chopped fresh basil
Instructions
- Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
- Wash the zucchini and cut off the ends, then slice into 1/4-inch thick rounds.
- In a large bowl, combine olive oil, salt, black pepper, and garlic powder, then toss the zucchini slices until evenly coated.
- Arrange the seasoned zucchini slices in a single layer on the prepared baking sheet.
- Evenly sprinkle shredded mozzarella over each slice, then top with grated Parmesan.
- Bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Remove from the oven and let cool for a couple of minutes, then garnish with chopped fresh basil before serving.
Notes
- For extra crunch, you can sprinkle 2 tablespoons of breadcrumbs over the cheese before baking.
- Add a pinch of red pepper flakes to the seasoning mix for a spicy kick.
- These are best enjoyed fresh from the oven to maintain crisp edges.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
