Description

Bright greens and juicy apple slices mingle with crunchy toasted walnuts and tangy feta, drizzled in a zesty lemon-honey dressing for a fresh, flavor-packed crunch.

Ingredients

  • 2 cups mixed salad greens
  • 1 medium apple, cored and thinly sliced
  • 1/2 cup shelled walnuts
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Pinch salt
  • Pinch black pepper

Instructions

  1. In a small bowl whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to create the dressing.
  2. Place mixed salad greens in a large salad bowl.
  3. Add apple slices, walnuts, and crumbled feta cheese to the greens.
  4. Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  5. Serve immediately and enjoy the fresh flavors.

Notes

  • For extra crunch toast the walnuts in a dry skillet over medium heat until fragrant.
  • Substitute pecans or almonds if walnuts are not available or preferred.
  • Prep the dressing ahead of time and store it in the refrigerator for up to three days.
  • Store salad components separately from the dressing to maintain freshness if making ahead.
