Description

Crunchy apple bites, plump grapes, and toasted pecans come together with chewy cranberries in a honey-lemon dressing that sparkles with tang and sweetness. A refreshing side bursting with textures and bright flavors.

Ingredients

  • 2 medium apples
  • 1 cup seedless grapes
  • 1/2 cup pecans
  • 1/4 cup dried cranberries
  • 2 tablespoons lemon juice
  • 3 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash the apples thoroughly, core them, and cut them into bite-sized pieces.
  2. Wash the grapes, pat them dry, and slice them in half.
  3. Toast the pecans in a dry skillet over medium heat for 3 to 5 minutes until fragrant, then chop roughly.
  4. In a small bowl, whisk together lemon juice, mayonnaise, honey, salt, and black pepper to make the dressing.
  5. In a large bowl, combine apple pieces, grapes, pecans, and dried cranberries.
  6. Pour the dressing over the salad and gently toss until all ingredients are coated.
  7. Chill in the refrigerator for at least 15 minutes before serving, if desired.

Notes

  • For extra crunch, substitute walnuts or almonds for pecans.
  • Use Greek yogurt instead of mayonnaise for a lighter dressing.
  • Prepare the salad up to 1 hour ahead and refrigerate to let flavors meld.
  • Adjust honey and lemon juice to taste for desired sweetness and tartness.
