Description

This vibrant salad bursts with sweet apple crunch, chewy cranberries, and toasted pecan crispness, all drizzled in a zesty honey-apple vinegar dressing. Each forkful balances tangy, sweet, and nutty notes perfectly.

Ingredients

  • 4 cups mixed salad greens
  • 2 medium apples
  • 1 cup dried cranberries
  • 1/2 cup pecans
  • 1/4 cup red onion
  • 1/4 cup feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the mixed salad greens and place them in a large salad bowl.
  2. Core the apples and slice them thinly, then add them to the bowl.
  3. Sprinkle in the dried cranberries, pecans, red onion, and feta cheese.
  4. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper until emulsified.
  5. Drizzle the dressing over the salad ingredients.
  6. Toss gently to combine and serve immediately.

Notes

  • For extra crunch, toast the pecans in a dry skillet over medium heat for 3 minutes.
  • Swap goat cheese for feta if you prefer a creamier texture.
  • Add orange segments or mandarin slices for a citrus twist.
  • Prepare the dressing ahead of time and store in the fridge for up to 3 days.
