Description

This vibrant salad combines peppery greens with tart apple slices, toasted walnuts, and mellow goat cheese, all tied together by a bright honey-lemon vinaigrette. Each bite contrasts crisp textures and refreshing flavors.

Ingredients

  • 4 cups arugula
  • 2 medium apples
  • 1/4 cup walnuts
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the arugula and place it in a large salad bowl.
  2. Core and thinly slice the apples and add them to the bowl.
  3. Toast the walnuts in a dry skillet over medium heat until fragrant, about 2 minutes, then allow to cool slightly.
  4. Crumble the goat cheese over the arugula, apple slices, and toasted walnuts.
  5. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper until well combined.
  6. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  7. Serve immediately to enjoy the crisp texture and fresh flavors.

Notes

  • Use a tart apple variety like Granny Smith for a bright contrast with the peppery arugula
  • Toast the walnuts just before assembling to keep them crunchy
  • Substitute goat cheese with feta for a tangier flavor profile
  • Dress the salad right before serving to maintain the arugula’s crispness
